It’s Not Chimichurri If It’s Made With Cilantro

Chimichurri is traditional Argentinian and Uruguayan sauce made from parsley, olive oil, garlic, onion, salt and pepper and something acidic like vinegar or lime. It’s a wonderful accompaniment to beef and can also be used as a marinade. It goes well with anything grilled or fried – seafood, beef or poultry.

Many would argue that it’s not chimichurri if it’s made with cilantro. Well, tonight all I had was cilantro so I made….Cilanchurri?!

Cilantro, garlic, dried red pepper flakes, ground cumin, salt, olive oil, vinegar(red wine vinegar, rice vinegar or white vinegar, whatever you have) or lime
