Chocolate Peanut Butter Pillows

One evening last week, we came home from work to the aroma of these cookies that my daughter had baked. (Recipe here – http://www.theppk.com/2009/03/peanut-butter-pillows/) They were so irresistible, I had dessert before dinner! Yesterday I baked a batch…taking my sweet time in the kitchen. I enjoy baking when there’s no time pressure…no rush…

If you like Reese’s Peanut Butter Cups, you will love these!

A note about the recipe: I ended up with extra peanut butter filling and not enough chocolate dough to wrap them with. They’re good to snack on as they are. The taste and texture reminds me of ChocNut, a Filipino candy(?).

The recipe says to make individual flat disks out of the chocolate dough. I thought it would be quicker to roll out the dough and use a cookie cutter. My cutter was a tad big for the size of my peanut butter filling. If you don’t have a cookie cutter, the rim of a small glass will do.
