Chorizo in Crispy Potatoes

I have a new favourite cooking show! It’s “Made In Spain” on PBS hosted by culinary innovator, José Andrés. This is one of his many classic tapas.

With a mandolin, slice potatoes thinly. Rinse under running water to remove starch. Drain and pat potatoes dry on a towel. Wrap chunks of chorizo with sliced potatoes and secure with a toothpick. I couldn’t make perfect slices so it took 2 slices to completely wrap each chorizo.

Deep fry in oil until they brown.

Drain on a paper towel.
